Some restaurant marinara recipes include Olive Garden's marinara sauce and Bertucci's marinara sauce. Marinara sauce is an Italian sauce that is usually made with a base of tomatoes, garlic, herbs and onions. Some variations use red wine, capers or olives.
A recipe that emulates Olive Garden's marinara sauce starts with 1/4 cup of extra virgin olive oil in a large sauce pan over medium heat. Add 3 cloves of peeled garlic, 1 tablespoon of tomato paste and a 35-ounce can of whole peeled Italian tomatoes. Mix in a handful of basil leaves and 1 tablespoon of oregano leaves, and add Italian seasoning, salt and pepper to taste. Bring to a boil, then simmer for 30 minutes. Remove the garlic cloves and basil leaves before serving.
Bertucci's marinara sauce is characterized as being sweet without being sugary, tangy and bright red. Start the sauce by adding 2 teaspoons of sugar and 1/4 teaspoon of salt to a large can of Italian tomatoes. Allow the tomatoes to sit, preferably over night. To cook, add 4 tablespoons of the tomatoes to a non-stick pan with 1/4 teaspoon of garlic and 1 teaspoon of olive oil. Cook on low heat until the liquid from the tomatoes cooks off.
When the garlic is a darker shade, and the sauce thickens, stir the rest of the tomatoes into the pan, and stir often. Add 1/4 teaspoon cracked black pepper and 1/4 teaspoon of dried sweet basil. Turn the heat up until the sauce begins to boil, then turn it down to medium heat with the lid slightly ajar, and cook for about 15 minutes.
