Ree Drummond's favorite meatloaf recipe consists of meat mixture containing eggs and bread, seasoned with Parmesan cheese, black pepper, salts, garlic, brown sugar and dry mustard. The recipe instructions call for the cook to wrap the meat mixture in a blanket of bacon and top it with sauce.
Soak 6 slices of white bread slices in a bowl of milk. Combine ground beef, chopped parsley and Parmesan cheese in a large bowl. Add the soaked bread and 4 eggs. Add salt and freshly ground black pepper. If desired, add finely minced garlic.
Knead the mixture together until all ingredients are well mixed. Shape the mixture into the shape of a loaf on top of a drip/broiler pan. Drape the mixture completely with slices of bacon. Make sure to tuck them underneath and overlap the pieces. Thin bacon works best.
Add ketchup into a bowl along with dry mustard and brown sugar. Add Tabasco as desired. Pour 1/3 of the sauce over the meatloaf and spread it over the bacon. Bake the meatloaf. After 45 minutes in the oven, remove the pan and add another 1/3 of the sauce on top of the meatloaf. Bake it for 15 more minutes, top with the remaining sauce, and serve.
