Alton Brown from the Food Network recommends a temperature of 350 F for baked potatoes. Brown’s recipe requires one hour of baking for one large potato. The Idaho Potato Commission recommends baking a potato to an internal temperature of 210 F.
To prepare a baked potato, set the oven to 350 F and wash the potato in cold water. With a fork, poke several deep holes around the potato and a line of holes on the top. These holes allow steam to escape during baking.
Coat the potato in oil and salt and place it in the middle rack of the oven with a baking sheet on the lower rack. After an hour, remove the potato from the oven and open it by pressing the ends together.
