These temperatures are the minimum safe temperatures for ensuring meat is cooked properly and reducing the risk of food borne illnesses. A minimum rest time is also recommended by the USDA for each type of meat. The rest time ensures that the meat will continue cooking after being removed from the heat source, destroying harmful germs.
