Some recipes featured on WBIR are Ziti with Italian Sausage and Grilled Pork Tenderloin Kabobs with Barbecue Glaze. Both recipes are simple to make and easy to follow.
To make the Ziti with Italian Sausage, boil 4 pounds of tomatoes, and set aside. Once cool, remove the skin. In a pot, add 2 tablespoons olive oil, 3/4 cup chopped onion and 2 minced garlic cloves. Cook for three to four minutes on medium heat, and stir. Crush the tomatoes into the pot, and add 1/2 tablespoon oregano, 1/2 tablespoon basil and 1/2 tablespoon sugar. Cover, and simmer for a few hours.
Add 1 small can of tomato paste, and continue simmering. Pour half of the sauce into a casserole dish, and layer on 1/2 pound cooked ziti, 1 cup ricotta and 3/4 pound Italian sausage. Add another layer of 1/2 pound cooked ziti, the rest of the sauce, 1/4 cup Romano and 1 pound mozzarella. Bake for 20 to 30 minutes.
To make the Grilled Pork, preheat the gas grill to high. Combine 1 pound pork tenderloin with 1 1/2 tablespoons salt, and let sit. In a bowl, combine 4 ounces ketchup, 4 ounces sorghum, 1 1/2 tablespoons chili powder, 1 1/2 tablespoons cornstarch and 1/2 tablespoon cayenne pepper. Add 1/4 cup of the sauce to the pork, and thread the pork onto two skewers. Grill for three to four minutes on each side, and serve with the sauce.
