Three recipes for vegetable smoothies are the carrot orange, cucumber mint and blended salad smoothies. These use vegetables as their base ingredients and can be personalized with fruits and vegetables already in the kitchen.
A carrot smoothie uses carrots, lettuce, Clementine oranges and Greek yogurt. Mix these ingredients to taste along with 1/2 cup of ice cubes in a blender. Shredded carrots blend better than sliced or cubed ones, and romaine lettuce is a good choice. However, cooks can put in other greens or use a different type of orange for a similar result.
For a cucumber and mint smoothie, mix coconut water, tap water, shredded cucumber and mint in a blender. Add in pineapple cubes or other acidic citrus fruit for sweetness, and include pea shoots and a cup of leafy greens for more nutrients. Frozen fruits and cucumber reduce the amount of ice needed for the right temperature and consistency.
A blended salad smoothie is very versatile and requires 2 cups of any vegetable or mix of vegetables, 1 cup of leafy green vegetables, such as lettuce or kale, and up to 1/2 of an avocado. Blend with water until the mixture is at the desired consistency. Include a little salt or oil to taste.
