Some recipes using whole wheat flour are oatmeal and raisin muffins, sour cream scones, chapatis and mixed-fruit cobbler. To make chapati, a type of flatbread, whisk together 3/4 cup each of whole wheat flour and all-purpose flour, and add 1/2 cup water. Knead the dough for a few minutes, and then allow it to rest for 15 minutes before forming it into 12 patties. Fry the dough pieces in a nonstick skillet at medium-high heat for 30 seconds.
To make the muffins, toss 1 cup whole wheat flour, 1/4 cup each of sugar and brown sugar, 2 tablespoons each of untoasted wheat germ and wheat bran, 1 /12 teaspoon baking soda and 1 teaspoon ground cinnamon in a bowl. Add 1/2 teaspoon salt, 1 1/2 cups quick-cooking oats, 1/3 cup chopped pitted dates, 1/3 cup raisins and 1/3 cup dried cranberries.
Pour 1 cup buttermilk, 1/4 cup canola oil, 1 teaspoon vanilla extract and 1 beaten egg into the flour mixture, and stir until everything is just combined before adding 1/2 cup boiling water. After allowing the batter to sit for 15 minutes, pour it into a greased muffin tin and bake the muffins at 375 degrees Fahrenheit for 20 minutes.
