Blueberry chess pie and strawberry crepes are both recipes that use mascarpone cheese. These recipes use mascarpone cheese in different ways, including baking it and using it fresh.
To make blueberry chess pie, mix 4 eggs, 1 cup of sugar, 1/2 cup of milk, 1/2 cup of melted butter, 1 tablespoon of flour and 1/2 teaspoon of vanilla. Toss 1 cup of blueberries in 1 tablespoon of flour, and fold into the mixture. Pour the filling into a pie plate with pastry crust and top with 1/4 cup of mascarpone cheese. Bake the pie for 40 to 45 minutes at 350 F, and let it cool before serving.
To make strawberry crepes, blend 3 eggs, 3/4 cup plus 2 tablespoons of milk, 3/4 cup of flour, 5 teaspoons of melted butter, 1 tablespoon of sugar, 1 teaspoon of vanilla extract and 1/4 teaspoon of salt. Refrigerate the mixture for one hour. To make the filling, combine 1 cup of mascarpone cheese, 2 tablespoons of confectioners' sugar, 3 teaspoons of minced basil and 1 teaspoon of lemon juice. Fold in 1 1/2 cups of sliced strawberries and refrigerate for 30 minutes.
To make the strawberry topping, mix 2 cups of sliced strawberries, 1/2 cup of sugar, 2 tablespoons of orange juice, 1 teaspoon of strawberry extract and a dash of salt. Let stand for 30 minutes. Make crepes by using 1/4 cup of batter per crepe. To serve, spoon the filling over the crepes, roll them up and top with strawberry topping.
