To make chicken Parmesan with Fritos, pound a chicken breast to 1/8-inch thickness. Sprinkle salt, pepper, basil, parsley and mozzarella on the smooth side of the chicken, roll the chicken to enclose the filling, and secure the roll with a toothpick. Bake at 375 F for 30 minutes, and let the pie rest for 15 minutes before serving.
To make classic Frito pie, mix corn chips with baked beans or chili, plus red onions. Top the pie with sour cream, chopped green onions or shredded cheese, if desired, and serve the dish hot. An alternative is to combine baked beans with sliced hot links, and mix the beans and sausage with Fritos and red onions. Heat the chili or baked beans and sausage before adding it to the Fritos.
