Some recipes using fresh blackberries are Fresh Blackberry Crisp, Old Bachelor's Jam and Blackberry Tart and Blackberry Iced Tea. Blackberry Iced Tea can also be made using frozen blackberries if desired.
To make Blackberry Iced Tea with fresh blackberries, combine the fruit with sugar and crush it before adding chopped fresh mint and a little baking soda. Allow four teabags to stand in boiling water for 3 minutes, and then pour the brewed tea over the blackberry mixture before leaving it to cool at room temperature for an hour. Pour it through a strainer into a pitcher and discard the solids before adding cold water and stirring it to dissolve sugar. Chill it before serving.
For Fresh Blackberry Crisp, combine fresh blackberries with sugar, lemon juice and flour on a deep pie plate. Combine another half cup of flour with brown sugar and butter in a bowl, and then sprinkle the mixture over the berry mixture and bake it for 30 minutes or until it bubbles.
To make Old Bachelor's Jam and Blackberry Tart, heat the oven to 375 F and roll out a disk of cornmeal pate brisee to an 11-inch round. Press it into a 10-inch springform pan and trim the edges so that they come up the sides of the pan to an inch. Refrigerate it for half an hour, and then prick it with a fork and back for 25 minutes or until golden. Spread on Old Bachelor's jam while it's hot and top it with fresh blackberries and toasted almonds before baking it for a further 10 minutes.
