Toast 5 hot dog buns, and place 1 hot dog in each. Top the hot dogs with 1 cup of guacamole, 1/3 cup of chopped fresh cilantro and 1/2 cup of crumbled queso fresco, divided evenly. Sprinkle julienned radishes over the tops for a garnish.
To make the bacon-wrapped squash, preheat the oven to 400 degrees Fahrenheit. Peel 1 small butternut squash, approximately 2 1/2 pounds, and chop it into 2-inch cubes. In large mixing bowl, toss the squash with 1 tablespoon of olive oil, 1 tablespoon of brown sugar, 1 teaspoon of smoked paprika, 1/2 teaspoon of chili powder and 1 teaspoon of kosher salt to coat.
Arrange 1 package of Farmer John cinnamon- and sugar-rubbed bacon on a microwave-safe plate lined with paper towels. Cover the bacon with a paper towel, and microwave it on the high setting for two minutes. Cut the bacon into 3 1/2-inch strips, and wrap the strips around the squash pieces. Skewer them with toothpicks to keep the bacon in place.
Lightly grease a baking rack, and place a foil-lined baking dish underneath it in the oven to catch the bacon drippings. Bake the squash for 30 minutes, turning once, until the bacon is crispy.Learn more about Cooking
