Recipes that use bitter melon include bitter melon chips and bitter melon stir-fry. Bitter melon has a strong flavor, and it's common to eat the skin as well as the flesh.
To make bitter melon chips, wash and pat dry 2 medium bitter melons, cutting the tops and tail ends off of each one. Slice the melons into thin rings, and transfer to a plastic container. Sprinkle 1 teaspoon salt over the rings, and use your hands to coat pieces. Allow the melon to sit for 30 minutes. Drain excess water, and then sprinkle melon with 1 teaspoon tumeric powder, mixing well.
Heat cooking oil in a deep fryer pan until hot. Fry a few pieces of melon at a time until crisp, and transfer to paper towels. Season with 1/2 teaspoon chili powder and 1 teaspoon chaat masala.
To make bitter melon stir-fry, cut 1 pound bitter melons lengthwise and remove the seeds. Cut each piece of melon into thin diagonal slices. Sprinkle melon pieces with salt, place them into a colander, and let drain for 15 minutes. In a small bowl, mash 1 tablespoon minced garlic with 1/2 teaspoon chili pepper flakes.
Heat 2 tablespoons cooking oil in a wok, and stir-fry garlic and chili mixture for 30 seconds. Add bitter melon, and continue stir-frying for two minutes. Add 2 tablespoons soy sauce, 1 tablespoon red wine vinegar and 1/2 teaspoon sugar, and stir-fry for an additional one or two minutes.
