Recipes that use V8 juice include V8's seven-ingredient chili, which combines 2 pounds ground turkey with 1 cup onions, 2 tablespoons chili powder and 1/2 teaspoon cumin. Heat these ingredients in a 4-quart sauce pan until the turkey is cooked. Add 3 1/2 cups V8 juice, a small chopped green pepper and 2 cans of kidney beans, rinsed and drained. Cook the chili until the vegetables are tender, about 15 minutes. This recipe serves six people.
For Cajun chicken fettuccine, mix 2 tablespoons all-purpose flour, 2 cups V8 juice and 1 teaspoon Cajun season in a medium bowl until smooth. Heat 1 tablespoon vegetable oil in a 12-inch frying pan over medium heat. Add 1 pound of boneless, skinless chicken breast halves, and cook until brown on both sides. Remove the breast halves from the skillet. Reduce the heat, and add another tablespoon of vegetable oil, 1 cup chopped green pepper and 1/2 cup chopped onion, and cook until tender and crisp. Add the flour mixture, and cook until boiling and thickened. Place the chicken in the pan, and cover and cook for five minutes, or until the chicken is cooked through. Serve with fettuccine pasta. This recipe serves four people.
