Some recipes that use sweet tomatoes are sweet tomato conserva, sweet tomato sorbet and sweet tomato chutney. Some recipes use sweet tomatoes only as a small ingredient or garnish, such as spring vegetable pizza with sweet tomato pesto.
Make sweet tomato conserva by removing the stems from 2 pounds of ripe plum tomatoes, and slitting an X in the skin at the bottom of the fruit. Boil the tomatoes for 30 to 60 seconds, then transfer the tomatoes to a bowl of ice water. Remove the skins, and cut the tomatoes in half. Mix 3 cups of water with 2 cups of sugar, 2 cinnamon sticks and 6 whole allspice berries. Bring the mixture to a boil, then simmer on low for 20 minutes. Add the tomatoes and cook for another 20 minutes. Remove the allspice and cinnamon, and chill the mixture before serving with 8 to 12 ounces of firm, salty cheese.
In order to make sweet tomato sorbet, core, peel and cut 3 pounds of tomatoes into chunks. Boil 1 cup of sugar and 1 cup of water, then chill the mixture in an ice bath for up to 10 minutes. Meanwhile, puree the tomatoes in a blender, and press through a sieve. Mix together the puree, sugar water and 6 tablespoons of fresh minced basil leaves, and freeze in an ice cream maker for three hours.
