Next, stir in 2/3 cup of milk until the dough mixture pulls away from the sides of the bowl. Adjust the amount of milk as necessary. Pat the dough out onto a floured surface until the dough is about 1 inch thick. Cut the dough into biscuits, and place the biscuits on a baking sheet. Bake the biscuits in the oven for 12 to 15 minutes or until the bottom of each biscuit is golden brown.
To make vegan spelt muffins, preheat an oven to 350 degrees Fahrenheit, and grease 12 muffin cups. Next, whisk 1 and 1/2 cups of spelt flour, 1 cup of rolled oats, 1 and 1/2 teaspoons baking soda and 1 teaspoon of ground cinnamon in the same bowl. In a different bowl, mix 2 ripe mashed bananas with 1/2 cup of sunflower seed oil and 1/2 cup of white sugar. Stir the two mixtures together until the dry ingredients are moistened. Divide the mixture evenly among 12 muffin cups.
Bake the muffins in the oven about 18 minutes, at which point a toothpick inserted in the center should come out clean. Allow the muffins to cool in the pan for 10 minutes, remove the muffins, and cool them completely on a wire rack.
