Numerous recipes can be made using Rhodes bread or roll dough, including savory dishes such as baked chicken empanadas and sweet desserts such as apple turnovers. No matter which recipe is selected, the first step is to thaw the dough overnight in the refrigerator or according to the package directions.
To make chicken empanadas, flatten 12 thawed dinner rolls into 6- to 7-inch rounds. Make a filling by mixing 2 cups of cooked chicken with 1 1/2 cups of grated cheese, 3 ounces of cream cheese, chopped bell pepper and the seasonings of your choice. Add approximately 1/4 cup of filling to each dough round. Dampen the edge of the dough with water, fold it in half and press the edges together with a fork. Bake the empanadas for 15 to 20 minutes at 350 degrees Fahrenheit.
For a sweet treat, trim the crust off a thawed loaf of bread, slice the loaf into 10 pieces and roll each one flat. Combine 1 cup of apple pie filling with 3 tablespoons of chopped pecans. Add 2 tablespoons of the filling in the center of each flattened piece of bread. Fold the edges over the filling to seal the turnover, and brush each one with melted butter. Roll the turnovers in a combination of sugar and cinnamon, and bake for 20 to 25 minutes at 350 F.
