Two recipes that use Karo syrup are roasted turkey breast with savory herb glaze and chipotle chip toffee. The turkey recipe makes six servings, and the toffee recipe produces a pound of candy.
To make the turkey, in a medium bowl, mix 1/4 cup of light Karo syrup, 1/4 cup of chicken broth and a tablespoon each of cornstarch, orange juice concentrate and extra virgin olive oil. Also add 1 1/2 teaspoons of celery salt, 3/4 teaspoon of both sage and thyme and 1/4 teaspoon of garlic powder. Marinate a 1 1/4 pound turkey breast in the mixture for a minimum of 10 minutes or even overnight for a more intense flavor. When ready to cook, preheat the oven to 350 degrees Fahrenheit, transfer the turkey to a 13-by-9-inch pan and pour the marinade over the top. Cook for 45 to 50 minutes or until fully cooked, slice the turkey, and cover with glaze before serving.
To make the candy, spray a baking sheet with spray, and then fill a saucepan with a cup of butter, 1 1/4 cup of sugar, 2 tablespoons of Karo syrup and 2 tablespoons of water. Heat and stir constantly, using a candy thermometer until the mixture reaches 300 degrees Fahrenheit. Remove from the heat, and stir in a teaspoon of chipotle powder, 2 teaspoons of vanilla extract and 4 cups of potato chips. Spread the mixture onto a greased baking sheet, and sprinkle with a cup of potato chip pieces. Cool for about 30 minutes, and then drizzle 1 cup of melted chocolate chips over the top before allowing to cool completely.
