Some recipes that require ground flax seeds include date-oat muffins and flax-seed smoothies. To make date-oat muffins, preheat the oven to 400 degrees Fahrenheit. Bake 1 cup of old-fashioned oats and 1/3 cup of chopped walnuts in separate baking pans until golden brown, about four to six minutes for the nuts and eight to 10 minutes for the oats. Toss once or twice during baking to cook all sides.
Combine 1 cup of whole-wheat flour, 3/4 cup of all-purpose flour and 1/3 cup of ground flax seeds. Mix in 2 teaspoons of baking powder, 1/2 teaspoon of baking soda and 1/4 teaspoon of salt. In a separate bowl, combine 2 large eggs and 2/3 cup of packed light brown sugar until the mixture is smooth. Mix in 3/4 cup of buttermilk, 1/2 cup of orange juice, 1/3 cup of canola oil, 1 teaspoon of vanilla extract and 2 tablespoons of orange zest.
Combine the wet and dry ingredients, and fold in the oats with 3/4 cup of chopped dates. Bake the batter in pre-greased muffin tins topped with 2 tablespoons of oats for 15 to 25 minutes.
To make a flax seed smoothie, process 1/2 frozen sliced banana, 1 cup of frozen strawberries, 2 tablespoons of ground flax seed and 1 cup of low-fat vanilla soy milk in a blender until smooth.
