To make lime-white pepper scallops with bell pepper sauce, puree 2 roasted red bell peppers in a food processor. Pour 2 tablespoons of olive oil into a skillet, add 2 minced garlic cloves, and cook them for one minute. Transfer the pepper mixture to the skillet, add the juice of 1 lime, ground white peppercorns, salt to taste, and mix all the ingredients together. Mix the zest of 1 lime, some salt and ground white peppercorns in a bowl. Insert stainless steel skewers into 16 large sea scallops, and cover scallops in the lime zest mixture. Cook the scallops on an electric grill that is set to high for two to four minutes on each side. Coat them with the sauce.
