Some recipes that use creamy goat cheese are potato gratin with goat cheese, savory cherry crostini, and goat cheese cake with mixed berries. Make a goat cheese ball by blending together 4 ounces each of softened cream cheese and goat cheese, mixed with 2 tablespoons of butter, 4 anchovy fillets, 1 cup of watercress, 1/4 cup of tender herbs and 2 tablespoons of chives. After chilling the mixture until it is firm, roll it in 3/4 cup of chopped pistachios.
To make savory cherry crostini, cook 3 cups of halved and pitted sweet cherries in 2 tablespoons of olive oil, until they soften and start to brown. After five minutes, season them with salt and pepper to taste, and remove them from the heat. Spread 8 toasted baguette slices with aged goat cheese, and spoon the cherry mixture on top.
Make potato gratin with goat cheese by cutting 3 large russet potatoes into 1/2-inch thick wedges and drizzling them with 1/4 cup of olive oil and 2 tablespoons of fresh rosemary leaves. Add Kosher salt and freshly ground black pepper to taste. Arrange the wedges on a baking dish, roast them at 425 degrees Fahrenheit for 15 minutes, and then turn the wedges, before roasting them for another 15 minutes. Top the potatoes with 4 ounces of goat cheese, and cook the wedges at a broil, only until the cheese starts to brown.
