Food Network's poblano cream cheese empanadas is a recipe that uses cream cheese. Smoked salmon and herb cream cheese bagel is another simple dish that contains cream cheese.
To make poblano cream cheese empanadas, peel, stem, seed and cut into cubes 2 poblano chiles, and mix them with 4 ounces of cream cheese. Season the mixture with salt and pepper to taste. Roll out 1 unfolded package of frozen puff pastry1/4-inch thick, and cut out four circles 5 inches in diameter. Put 1 tablespoon of filling into each circle. Beat 1 large egg, brush the edge of each circle with the egg wash, and fold each circle in half.
Place the empanadas on a baking sheet, brush them with the remaining egg, and bake them at 350 degrees Fahrenheit for about 30 minutes or until they become golden brown.
To make smoked salmon and herb cream cheese bagels, mix 8 ounces of cream cheese, 1 tablespoon of minced scallions, 1 tablespoon of minced fresh dill, 1 tablespoon of minced fresh parsley and 1 tablespoon of milk using an electric mixer. Add salt to taste. Cut 2 bagels lengthwise into three parts each. Spread the cream cheese mixture on top of three slices, put a slice of smoked salmon on each slice, and place another bagel round on top.
