Some recipes that use Chinese cabbage as a main ingredient are napa cabbage slaw and stir-fried chicken with Chinese cabbage. Both recipes are simple and easy to follow.
To make napa cabbage slaw, whisk together the juice of 1 lime, 3 tablespoons rice vinegar, 2 tablespoons Asian chili oil, 1 tablespoon mayonnaise and 1 tablespoon soy sauce. Add 3 cups finely shredded napa cabbage, 1 thinly sliced red bell pepper, 1 thinly sliced orange bell pepper, 1/2 cup thinly sliced snow peas and 3 thinly sliced scallions, and toss to combine. Season with salt and pepper to taste, and refrigerate for 30 minutes.
To make stir-fried chicken with Chinese cabbage, combine 1 1/3 pounds boneless skinless chicken breasts cut into 1-inch pieces with 1 tablespoon soy sauce, 1 tablespoon dry sherry and 1/4 teaspoon cayenne. Let the chicken marinate for 10 minutes. In a wok, heat 1 tablespoon oil, and add chicken and cook for one to two minutes, and then remove from the heat. Add 1 tablespoon oil, and add 1 chopped onion, 2 cloves minced garlic and 1 teaspoon ground coriander. Cook for four minutes, and add 2 tablespoons sherry and 1 tablespoon wine vinegar. Add 1/2 sliced head Chinese cabbage, 3/4 cup drained sliced water chestnuts, 4 teaspoons soy sauce, 2 teaspoons tomato paste, 1/4 teaspoon dried red-pepper flakes and 3 tablespoons water. Add the chicken, 3 tablespoons chopped cilantro and 1/8 teaspoon salt, and then cook for one to two minutes.
