Recipes that use baked spinach include Spinach-Cheese Bake from MyRecipes and Spinach and Cheddar Strata from Martha Stewart. Another good recipe is Spinach Tart with Olive-Oil Cracker Crust, in which the spinach is boiled before baking.
To make Spinach-Cheese bake, coat the bottom of a baking dish with 1 tablespoon of melted butter, then layer on 12 ounces of fresh baby spinach topped with 1 1/4 cups of shredded sharp cheddar cheese and 3/4 cup of shredded Monterey Jack cheese. In a bowl, mix together 1 1/3 cup of all purpose flour and 1 teaspoon of baking powder, and flavor the mixture with 1 teaspoon of salt, 2 teaspoons of Dijon mustard, 1/4 teaspoon of black pepper, 1/8 teaspoon of ground red pepper and 1/8 teaspoon of ground nutmeg. Stir in 1 1/2 cups of fat-free milk and 1 cup of egg substitute until well-blended, and pour the mixture over the top of the grated cheese. Bake the casserole for 40 minutes at 350 degrees Fahrenheit.
To make the Spinach and Cheddar strata, cook 10 ounces of spinach in 1 teaspoon of olive oil for two minutes before placing it and 3 cups of day-old bread cubes in a baking dish. Pour a mixture made from 5 eggs, 1 cup of whole milk and 3/4 cup of grated cheddar cheese over the spinach and bread. Top with 1/2 cup of grated cheddar, and bake at 400 degrees Fahrenheit for 20 to 25 minutes.
