A traditional or old-fashioned macaroni salad recipe combines hard-boiled eggs with ham, celery, shallots, macaroni and a rich dressing of mayonnaise, Dijon mustard, pimento and relish. An alternate macaroni salad recipe uses pickle juice, green onions, roasted red peppers and olives in the dressing instead of the shallots, ham, eggs and celery.
This old-fashioned macaroni salad recipe takes only a little time to prepare but considerable sitting time to absorb the flavors. It yields around 4-6 servings.
Bring a large pot of salted water to boil and pour in the macaroni. Allow to cook until semi-firm, drain, rinse with cold water and set aside. Combine the macaroni in a bowl with the chopped eggs, ham, celery, shallots and lemon juice. In another bowl, combine the mayonnaise, Dijon mustard, relish and a little salt and pepper with a whisk. Combine the dressing with the macaroni mixture, adding more salt and pepper if required. Cover the bowl and place in a refrigerator for at least 2 hours before serving.
An alternate macaroni salad recipe is made basically the same way, but with variations in the dressing. In addition to mayonnaise, salt, pepper, sugar and vinegar, add in pickle juice, olives, roasted red peppers and green onions to the dressing.
