Make stuffed jalapeños according to Martha Stewart's recipe by combining 4 ounces of softened cream cheese with 1/2 cup of grated sharp cheddar cheese in a bowl. Add salt and pepper to taste. Cut 6 large jalapeño peppers into halves, and remove the seeds. Stuff each jalapeño half with approximately 1 tablespoon of the cheese mixture. Arrange the jalapeños on a lined baking sheet, and bake them at 450 degrees Fahrenheit for 10 minutes or until the cheese is golden-brown and bubbly.

Follow Food Network's recipe by slicing 15 jalapeño peppers into halves and removing the seeds and veins. Put the jalapeños on a baking sheet, and roast them at 350 degrees Fahrenheit for 10 minutes. Cook 2 pounds of uncased Italian sausage in 1 tablespoon of oil before adding 1/4 cup of minced red onion, 1/4 cup of minced red bell pepper and 3 tablespoons of minced garlic to the pan. When all the ingredients are tender, transfer them into a bowl, and allow the mixture to cool. Incorporate 2 cups of mascarpone cheese and 1/4 cup of grated Parmesan cheese, and add salt and pepper to taste.

Fill each jalapeño half with about 1 tablespoon of the cheese-and-sausage mixture and 1/2 teaspoon of shredded mozzarella cheese. Broil the jalapeños until the mozzarella topping melts.
