Cut in 3/4 cup of cold margarine or butter until the mixture is coarse and crumbly. Stir in 1 cup of uncooked oats and 1/2 cup of chopped pecans. Reserve one cup of the oat mix and press the rest into the bottom of a foil-lined, 13-inch by 9-inch pan and bake it for 15 minutes at 350 degrees Fahrenheit.
Meanwhile, beat 8 ounces of cream cheese together with 1/2 cup of sugar, 3 eggs, one 15-ounce can of pumpkin and 1 tablespoon of pumpkin pie spice. Pour over the baked crust, then sprinkle the remaining crumble mixture over the top before baking for another 25 minutes. Allow the dish to cool before cutting into squares.
To make chocolate-topped crispy bars, heat 2 tablespoons of unsalted butter in a large saucepan. Add a 10-ounce bag of marshmallows and stir until they are melted. Then, add 6 cups of puffed rice cereal and stir until combined. Press the cereal mixture into a lightly greased 9-inch by 13-inch baking dish. Melt approximately 12 ounces of chocolate and spread it evenly over the cereal mixture.
