Add in a crushed, dried red chili pepper, 1 teaspoon paprika, 1/2 teaspoon fennel and thyme, and salt and pepper. Stir in an 8-ounce can of tomato sauce and simmer for 10 minutes. Add in 2 tablespoons grated Parmesan cheese.
Divide the meat mixture between six hollowed out French rolls, and top with mozzarella cheese. Bake the sandwiches at 375 degrees Fahrenheit for 15 to 20 minutes.
