Almost any recipe can be adapted to serve 50 people, including recipes for meat loaf and macaroni salad. Five 5-by-9-inch loaf pans hold about 50 servings of meat loaf, and at least two large serving bowls are needed to prepare macaroni salad for 50 people.
To make enough meat loaf to serve 50, beat 12 eggs with 1 quart of milk, and combine with 10 pounds of ground beef, 2 pounds of ground pork and 3 cups of breadcrumbs in a very large bowl. Stir 1 large minced onion, 1 diced bell pepper and 4 cups of drained stewed tomatoes into the meat mixture, and add 2 tablespoons of salt, 1 teaspoon of black pepper and 1/8 teaspoon of cayenne pepper. Combine the mixture by hand until vegetables are just blended, press into greased loaf pans, and top the loaves with ketchup and brown sugar. Bake for 1 1/2 hours at 325 degrees Fahrenheit.
Prepare four 16-ounce packages of macaroni according to the package directions to make 50 servings of macaroni salad. Drain the pasta, rinse with cold water, and divide between two large bowls. Add 2 chopped carrots, 2 diced bell peppers and 1/2 of a chopped red onion to each bowl, and toss gently. In a separate bowl, mix 2 cups of mayonnaise, 1/2 cup of lemon juice and 1/2 cup of vinegar with 1/2 cup of sugar, salt and pepper until well blended. Pour 1/2 of the dressing over each bowl and mix well; refrigerate the salad for at least two hours before serving.
