Traditional seasoning salt generally consists of salt, spices and pepper. In addition to traditional seasoning salt, other seasoning salt recipes include lemon pepper, rosemary garlic, celery salt, smoky ancho chili salt and tarragon with wild mushroom salt.
A basic recipe for traditional seasoning salt starts with 1 tablespoon of kosher salt. Add 1 tablespoon of either cumin, coriander, fennel seed or brown sugar. Add a tablespoon of either mustard powder, sweet paprika or mild chili powder. The third spice should be 1 tablespoon of sesame seeds, dried oregano, dried thyme or garlic powder. Finish with 1 tablespoon of black pepper, cayenne pepper, smoked paprika or red pepper flakes.
One example of the above is mixing the salt with fennel, mustard, oregano and black pepper for pork chops. Another option is salt, cumin, chili powder, sesame seeds and smoked paprika for grilled vegetables.
Lemon pepper consists of equal parts salt, pepper and lemon peel. For rosemary garlic, mix equal parts salt, rosemary and garlic powder or flakes. For celery salt, mix salt, crushed celery leaves and celery seeds.
Smoky ancho chili salt and tarragon wild mushroom salt are specialty blends. For the first, crush 1 teaspoon ancho chilis, and mix this with 1 tablespoon smoked sea salt and 1 teaspoon smoked paprika. For the second, grind dried porcini and dried chaterelle mushrooms together. Add salt, tarragon and white pepper.
