Two recipes that have sauteed onions and peppers are Italian sausage, onions and peppers and cheesesteak sandwiches with sauteed onions and peppers. To saute the onions and peppers, heat some oil in a skillet over medium-high heat until a drop of water sizzles in the oil, then add the onions and peppers. Cook, stirring frequently, until the onions are transparent and the peppers are tender.
For Italian sausage, onions and peppers, thinly slice 1 red pepper, 1 green pepper and 1 onion. Mince 2 cloves of garlic. Saute 1 package of sliced mild Italian sausage and the peppers, onions and garlic in 1 tablespoon of olive oil until the vegetables are tender. Add 1 14.5-ounce can of diced tomatoes with basil, garlic and oregano and 1/4 teaspoon of red pepper flakes. Cook, stirring, for five minutes or until heated through.
To make cheesesteak sandwiches, saute 2 onions and 2 red bell peppers, all thickly sliced, in 1 1/2 tablespoons of olive oil and 1 tablespoon of butter. Cook for about 10 minutes on medium heat until tender, then remove from heat.
Toss 2 pounds of paper-thin strips of beef top round with 1/2 teaspoon each of salt and pepper. Add the same amounts of oil and butter to the skillet, heat, and add one-fourth of the beef. Cook on medium-high heat until meat browns. Repeat for the rest of the beef.
Return the beef, peppers and onions to the pan, and stir in 2 teaspoons of Worcestershire sauce. Put equal amounts of beef on the bottom halves of 6 hoagie buns. Top each with 3 tablespoons of cheese dip, and cover with the bun tops.
