To make Halloween chocolate s'mores cookies, microwave 7 ounces of milk chocolate dipping chocolate according to package directions. Place 24 chocolate graham cracker squares smooth-side up on a surface. Dip 24 large marshmallows in chocolate one at a time, turning to coat evenly. Place two marshmallows side by side on top of a graham cracker square, and top with a second square to make a sandwich. Dip each side into orange sprinkles, and refrigerate for 15 minutes.
To make s'more sandwich cookies, cream 3/4 cup of butter with 1/2 cup sugar and 1/2 cup of packed brown sugar. Beat in 1 egg, 2 tablespoons of milk and 1 teaspoon of vanilla extract. Mix 1 1/4 cups of flour with 1 1/4 cups of graham cracker crumbs, 1/2 teaspoon of baking soda, 1/4 teaspoon of salt and 1/8 teaspoon of cinnamon. Combine the dry mixture with the creamed mixture, and stir in 2 cups of semisweet chocolate chips.
Drop the batter by tablespoonfuls onto baking sheets, and bake at 375 F for eight to 10 minutes. Cool on wire racks. Transfer four cookies bottom-side up onto a microwave-safe plate. Top each cookie with a marshmallow, and microwave on high for 10 to 15 seconds. Top each marshmallow with another cookie, and repeat the process with the rest of the batch.
