Honey Roasted Sweet Potatoes, Indian Sweet Potatoes and Sweet Potato Fries are delicious recipes for roasted sweet potatoes. Add cooked peas, spinach, roast white potatoes, parsnips, turnips and other root vegetables, along with sweet potatoes for a more colorful dish.
Cut up four large sweet potatoes into 1-inch chunks and coat with 4 tablespoons of coconut or olive oil, 2 tablespoons of honey, 1/4 teaspoon of salt, and herbs of choice. Thyme, sage and black pepper are delicious for a sweet and savory option, while red pepper flakes add a spicy flare to the sweetness of the potatoes. Roast in the oven at 400 degrees until golden brown on the outside, usually at least 30 minutes. Stir the potatoes once about halfway through cooking time. Keep a close eye on the potatoes, as the honey may make them burn more easily.
To make Indian Sweet Potatoes, cut the sweet potatoes into 1-inch chunks and add to a bowl with 2 to 4 tablespoons of oil. Grind 1 teaspoon of cumin seeds and add to the potatoes with a little salt and black pepper. The cooking time is the same as above.
For a crispy snack or side dish, make Sweet Potato Fries. For crispier fires, slice the sweet potatoes into thinner sticks. If soft and tender is the aim, cut the sweet potatoes into thick slices. Coat with oil, salt, and pepper and roast in the oven at 425 degrees. Stir halfway through cooking and rotate trays to avoid uneven browning.
