Most cranberry relish recipes featuring Ocean Spray cranberries do not require baking and typically include ingredients such as sugar, oranges, apples and walnuts. A baked version of cranberry relish recipe from Taste of Home combines cranberries and marmalade for a rich, baked side dish.
Ocean Spray offers a recipe that combines an unpeeled, seeded orange, fresh or frozen cranberries and sugar. Slice the orange into eighths, and then place four of the slices and half of a 12-ounce package of fresh or frozen cranberries into a food processor. Process until the fruit is evenly chopped, then repeat with the other half of the orange and cranberries. Mix the chopped fruit and 3/4 to 1 cup of sugar in a large bowl, and refrigerate.
Martha Stewart's recipe blends a large, unpeeled apple cut into halves, 1/2 of a seeded, unpeeled navel orange, 2 cups cranberries, 1/2 cup walnuts and 1/4 cup sugar together for a crunchy, sweet dish. Pulse each ingredient except sugar separately in a food processor until chopped, then combine in a large bowl. Stir in sugar, and serve or refrigerate.
For a baked cranberry relish, combine 4 cups fresh or frozen cranberries and 2 cups sugar in a 13-by-9-inch baking dish, and bake at 350 degrees Fahrenheit for 1 hour. While the cranberries are baking, stir together 1 cup orange marmalade, 1 cup chopped toasted walnuts and 3 tablespoons lemon juice in a large bowl. Stir the baked cranberries into the mixture, then refrigerate until the relish is chilled.
