To make pure tomato juice, clean and quarter fresh tomatoes and process the pieces through a juicer. You can also process the quarters in a grinder to make a paste, and use water to thin it into a drinkable consistency.
If you desire, you can season the tomato juice with salt and pepper.
Some basic tomato juice recipes include additional ingredients to enhance the flavor. To make homemade tomato juice with added ingredients, place 3 pounds of chopped tomatoes, 1 1/4 cups of chopped celery stalks and leaves, and 1/3 cup of chopped onion in a pot. Add 2 tablespoons of sugar, 1 teaspoon of salt and a pinch of black pepper, and simmer the ingredients for 25 minutes. Strain the juice through a sieve, and chill it in the refrigerator before serving.
