To prepare the pan-fried pork chops, season 8 breakfast-cut pork chops with salt and black pepper. Mix 1 cup of flour with dashes of salt, cayenne pepper and black pepper. Pull both sides of each pork chop through the flour mixture, and transfer the pork chops onto a plate. Warm up 1/2 cup of canola oil and 1 tablespoon of butter in a pan over medium-high heat. Cook 2 to 3 pork chops at a time by frying them for approximately two minutes on each side, and serve the pork chops with smashed new potatoes.
To make the strawberry oatmeal bars, combine 1 3/4 sticks of salted butter with 1 1/2 cups each of oats and all-purpose flour, 1 cup of brown sugar, 1 teaspoon of baking powder and 1/2 teaspoon of salt. Pack half of the oat mixture into a buttered 9-by-13-inch baking pan, and slather on 10 ounces of strawberry preserves. Scatter the remaining oat mixture on top, and gently press it down. Bake the mixture at 350 F for 30 minutes or until it forms a golden brown crust, and then allow it to cool completely before cutting it into squares.
