Some recipes for old-fashioned walnut cake are Apple Walnut Cake and Vanilla Glaze and Old-Fashioned Date and Walnut Cake. The latter recipe requires dates, walnuts, flour and muscovado, or unrefined sugar, as well as a basic buttercream frosting.
To make Old-Fashioned Date and Walnut Cake, cook 11 ounces of pitted and chopped Medjool dates in 6 1/4 fluid ounces of orange juice. Bring the mixture to a boil, and mash up the softened dates. Add 1 teaspoon of baking soda to the mixture, and remove the saucepan from the heat. Beat together 3 eggs, 6 1/4 fluid ounces of sunflower oil and 7 ounces of light muscovado sugar in a bowl, then add the date mixture and 8 ounces of flour.
Season the batter with 1/2 teaspoon of ground cinnamon and 3 ounces of chopped walnuts, and pour it into a cake pan. Bake the cake at 375 degrees Fahrenheit for 25 to 30 minutes. Meanwhile, make the frosting by creaming together 7 ounces of softened butter, 9 ounces of sifted powdered sugar, 1 teaspoon of vanilla extract and 1 tablespoon of milk. Frost the cooled cake and garnish it with walnut halves. Another recipe replaces the dates with chopped and peeled apples and uses a glaze made from confectioners' sugar, vanilla extract and milk.
