Native American recipes include three sisters soup, fried bread, and broths made of herbs and meat. Recipes of Native American people generally include foods such as corn, squash, wild herbs and meat from trapped or hunted animals.
Three sisters soup or stew consists of corn, beans and squash. To make this dish, place 1 cup of pinto beans that have been soaked overnight into a pot, and cover with water. Bring to a boil, and then simmer for 45 minutes until the beans are tender.
While beans are cooking, bake halves of a squash at 375 degrees Fahrenheit for 45 minutes. Heat oil in a large frying pan, and sauté 1 onion until brown over medium heat. Add 1 large diced carrot and 1 chopped stalk of celery, and sauté for five to 10 minutes. When the squash is done, scoop out the flesh, and add it to the onion mixture.
Drain the cooked beans, and cover with 3 to 4 cups of vegetable stock. Add the squash and onion mixture to the beans, along with 1 cup of corn. Stir, cover, and simmer for 15 minutes.
To make fried bread, mix 4 cups of flour with 2 tablespoons of baking powder and 1 teaspoon of salt. Add shortening, and mix together until well incorporated. Gradually add just enough water to make the flour mixture form into a dough. Knead the dough until smooth, separate into several balls, and let it rest for 10 minutes under a towel. Pat the dough into flat circles, and fry in hot oil in a heavy iron skillet until browned on both sides.
