Some recipes available from McCall's Recipe Cards are tomato aspic and minestrone soup. These are both vintage recipes styled to taste like simple homemade concoctions.
You can prepare tomato aspic with 1 quart of tomato juice, 12 whole black peppers, 8 whole cloves, 2 bay leaves and 3 envelopes of unflavored gelatin. Start by mixing 5 cups of juice with the peppers, cloves, leaves and some salt in a medium-sized saucepan. Boil this mixture, and leave it to cool for about five minutes. Sprinkle some of the gelatin over the leftover tomato juice. Add this mixture to the other mixture, stirring until the gelatin dissolves. Strain the mixture, and pour it into molds. Refrigerate for at least three hours to make firm.
To make McCall's minestrone soup, start by refrigerating some beans with cold water the night before cooking. The next day, boil the beans. Add various other vegetables, such as cabbage, carrots, turnips and tomatoes, to the soup, and continue to cook. On the side, sauté onion in a skillet. Add more tomato, celery, parsley, garlic, and some salt and pepper to the soup after some time. After cooking for a bit longer, add some spaghetti to the mixed soup. Boil for a bit longer, then sprinkle some Parmesan cheese on the top, and serve.
