To make Kraft's recipe for fantasy fudge, first line a 9-inch square pan with aluminum foil. In a saucepan, heat 3 cups sugar, 3/4 cup butter and 1 5-ounce can evaporated milk until the mixture reaches a rolling boil. Cook for about 4 minutes, stirring constantly. Remove from heat. Stir in 12 ounces of chopped semi-sweet chocolate and 1 7-ounce jar marshmallow cream. Stir until melted, then add 1 cup chopped walnuts and 1 teaspoon vanilla extract. Pour the mixture into the foil-lined pan. Spread evenly, and let cool completely.
For David Lebovitz's marshmallow cream fudge, line an 8-inch square pan with foil. Place 2/3 cup evaporated milk, 6 ounces salted butter and 3 cups sugar in a saucepan. Heat, stirring constantly, until the mixture reaches 234 degrees Fahrenheit. Remove the mixture from heat, and stir in 8 ounces chopped bittersweet or semisweet chocolate, 4 ounces unsweetened chocolate and 7 ounces marshmallow cream. Continue stirring until melted. Stir in 1 cup roasted peanuts, then pour the fudge mixture into the pan. Let it cool for at least four hours. Lift the fudge from the pan, and cut into cubes.
