In a large bowl, mix together by hand 2 cups of barley flour, 1/2 cup of old-fashioned oatmeal, 1/3 cup of shredded cheddar, 1/4 cup of grated Parmesan cheese, 1/3 cup of unsweetened applesauce and 2 tablespoons of olive oil.
Add approximately 3 tablespoons of water and form the ingredients into dough. Roll the dough out between two sheets of plastic wrap to about 1/4-inch thick, cut into bars or cookie-cutter shapes and bake in the preheated oven for 30 minutes or until firm and browned. Cool biscuits on a wire rack and store in an airtight container for up to two weeks.
