One recipe that uses pineapple and rum combines 1 46-ounce can pineapple juice, 2 cups spiced rum and 1/2 cup of fresh lime juice. Mix together well in a large pitcher. Serve over ice in tall glasses with lime slices as a garnish.
Another drink that uses rum and pineapple juice is called a Texan Truce. This recipe makes one serving and uses 1.5 ounces of white rum, 1/2 ounce pomegranate juice, 1 ounce lemon juice, 1 ounce pineapple juice and 2 dashes of bitters. Combine ingredients, except for the bitters, in a shaker, and then strain into an ice-filled rocks glass. Top with bitters, and garnish with a pineapple wedge.
For a fruity drink that works well with a black spiced rum, try a Black Wild Ginger. You need 3/4 ounces black spiced rum, 1 1/2 cup dry white wine, 2 splashes of pineapple juice and sour mix, 1 splash of ginger ale, 2 orange slices, 3 lemons, and 5 mint leaves. In a mixing glass, crush the fresh fruit to extract the juices. Add the rum, wine, pineapple juice, sour mix and ginger ale, and then add ice to the glass and stir. Pour into a chilled wine glass, and garnish with a sprig of mint.
