Great for making butter at home, this butter recipe from The Fabulous Baker Brothers requires cream, a food processor or electric mixer, a mesh sieve and cold water. For variations, add ingredients such as garlic, herbs, anchovy or lemon.
Pour cream into the mixer, leaving plenty of room for the liquid to move around. Let it process for 5 to 7 minutes, until the cream separates into curds of butter and butter milk. Strain the mixture over a mesh sieve and rinse the butter curds in cold water. Squeeze the curds together to form a ball and roll it in a piece of grease proof paper.
