Pour 2 cans of low-sodium beef broth over the meat and vegetables and cook on low for eight hours.
To make an unusual London broil in a slow cooker, cube 2 large onions, chop 2 cups of celery and mince 3 cloves of garlic. Place 3/4 of this mixture on the bottom of the pot. Prepare 3 cups cubed butternut squash, 6 cups chopped cabbage, 3 cups chopped tomato and 1/2 cup chopped parsley. Place 3/4 of the vegetables and parsley on top of the onion and celery mixture.
Place 2 pounds of London broil over the bed of vegetables and season with 1/2 teaspoon each salt and pepper, 1 teaspoon thyme and a pinch of chili pepper. Top with the remaining vegetables, add 1 1/4 cups of water and cook for six hours.
