Sweet Bows Crostoli and olive oil mashed potatoes are recipes from chef Lidia Bastianich's show on Create TV. The mashed potato recipe is a simple but distinctly Italian take on a well-known comfort food, whereas the Sweet Bows Crostoli is a family dessert recipe.
To create olive oil mashed potatoes, place 1 pound Idaho or Yukon Gold potatoes, scrubbed but not peeled, into a large saucepan and just barely cover them with water. Season the water with a little salt and bring it to a boil. Boiling time may vary depending on the size of the potatoes, which should be tender but still hold their shape. Drain and let them cool enough to handle. Pass the potatoes through a ricer or a fine disk and stir in 1/4 cup of extra virgin olive oil and salt and pepper to taste. Optionally, toast 3 large garlic cloves with olive oil in a small skillet and add to the potatoes.
To make Sweet Bows Crostoli, melt 6 tablespoons of butter and stir in 1/4 cup plus 2 tablespoons of sugar, 1/4 cup of milk and 1/2 teaspoon of salt. Combine the ingredients in an electric mixer bowl with 2 1/4 cups of flour, 1 whole egg, 3 tablespoons of dark rum, 1/2 of the juice from a lemon and all of its zest, grated. Mix until the dough is soft by not sticky and roll it out about 1/8 inch thick. Deep fry until golden brown and coat with confectioners sugar.
