Recipes for gelatin molds that incorporate frozen whipped topping include layered gelatin mousses combining orange-flavored gelatin with mandarin oranges and raspberry-flavored gelatin with jellied cranberry sauce. Place one 11-ounce can of drained mandarin oranges in the bottom of a 6-cup mold, and cover the oranges with 2 cups of the gelatin mixture. Refrigerate the mold for 30 minutes. Add 2 cups of thawed frozen dessert topping to the remaining gelatin after it has chilled for 30 minutes, stirring until well-blended. Pour it over the molded gelatin layer, chilling for an additional 4 hours. Unmold, and serve with the remaining whipped topping.
For a layered cranberry mousse mold, add 2 cups of boiling water to one 6-ounce package of raspberry gelatin mix, stirring for 2 minutes. Add one 8-ounce can of jellied cranberry sauce, breaking it up with a fork and stirring the mixture until well-blended. Pour in 1 cup of cold water, mix it well, and transfer 1 1/2 cups of the gelatin mixture into a 6-cup mold. Chill the mold for 45 minutes. Refrigerate the remaining gelatin mixture, stirring in 2 cups of thawed frozen whipped topping at the end of 45 minutes. Pour the whipped topping mixture over the gelatin layer in the mold, and refrigerate for 4 hours. Unmold, and garnish with the remaining whipped topping.
