Three recipes that include leftover mashed potatoes are mashed potato muffins, potato cakes and crispy potato mounds. These recipes can be used with fresh or leftover mashed potatoes and are easy to follow.
The mashed potato muffins recipe requires mashed potatoes, a large egg, shredded cheese and chopped fresh chives. Mix the potatoes, egg, some cheese and some chives in a bowl, then spoon into a muffin tray. Make a depression in the center of each muffin, then bake at 375 degrees Fahrenheit for 30 minutes or until browned. Top the muffins with the extra cheese and bake until melted. Remove from the pan, and add the remaining chives.
Potato cakes use mashed potatoes, vegetable oil, butter, flour, and salt and pepper to taste. Create flat disks with the potatoes, and melt butter with oil in a skillet. Mix the dry ingredients and coat the potatoes with the resulting mixture. Cook the potatoes in the skillet for 15 minutes on each side until browned.
For crispy potato mounds, mix mashed potatoes with seasonings, such as rosemary, butter, garlic or other herbs. Put the mixture in a piping bag, then pipe out small circles of the mixture onto a baking sheet. Bake until crispy and browned, around 30 minutes.
