To make the cheese sauce for the Croque Madame, melt 3 tablespoons of unsalted butter in a saucepan over medium-high heat. Add 3 tablespoons of flour and whisk it constantly for two minutes, then stir in 2 cups of whole milk and salt to taste. Whisk the mixture until it begins to boil, and then allow it to boil for five minutes. Remove the milk mixture from the stove, stir in 2 cups of grated Gruyere cheese, and season with salt and pepper.
To make the Croque Madame, start by cracking eggs into a large skillet with melted butter. Season the eggs with salt and pepper and allow them to cook until the bottom of the whites are firm. Transfer the skillet to an oven preheated to 350 degrees Fahrenheit. Leave the skillet in the oven for two more minutes to completely cook the egg whites. To assemble the sandwiches, place a thick slice of brioche bread onto a plate and pour some cheese sauce on top. Put a few slices of prosciutto, an egg and some more cheese sauce on top.
