Two complementary recipes are Food Network's stone crab salad and HGTV's avocado fries. To make the crab salad, combine 1 1/2 pounds of stone crab or other crab meat in a medium bowl with 4 ounces of chopped celery, 4 ounces of chopped onion and a pinch of fresh cilantro.
Add a small amount of mayonnaise until the mixture is lightly coated and loosely binds together, adjusting the mayonnaise until the salad reaches the desired consistency. Season the crab salad with salt and pepper to taste.
To make HGTV's avocado fries, place 1/2 cup of milk and 1/2 cup of flour into 2 separate shallow bowls. In another bowl, beat 1 egg with about 1 tablespoon of water. Slice 1 ripe avocado into 1/4-inch matchsticks. Drop each slice into the milk, then the flour, then the egg, and again in the flour, placing the slices on a separate plate.
Pour canola oil into a heavy skillet until the oil reaches about 1/4- to 1/2-inch deep. Heat the oil until it spatters when a drop of water is added. Gently add the coated avocado slices to the skillet and cook the fries for one minute on each side, until they are slightly brown. Remove them from the oil and drain them on paper towels.
To make a Sriracha dipping sauce, mix 1/2 cup of mayonnaise and the juice of 1 lime in a small bowl. Season the mayonnaise with Sriracha chili sauce to taste.
