A recipe for gumdrop loaf contains flour, sugar, butter, buttermilk and gumdrops. Another recipe calls for cream cheese and instructs the baker to toss the cut gumdrops with flour before folding them into the cake batter.
To make a gumdrop loaf, combine 2 1/2 cups of all-purpose flour, 1/2 cup of granulated sugar, 1/2 cup of brown sugar, 1/4 cup of butter and 1 1/4 cups of buttermilk in a bowl. Add 3 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1 teaspoon of salt, 1 teaspoon of vanilla and 2 eggs to the mixture. Fold in 1 cup of halved gumdrops and 1/2 cup of chopped nuts, and pour the batter into a baking pan. Bake the cake at 350 degrees F for 60 to 65 minutes.
To make a cream cheese gumdrop loaf, toss 1 pound of halved gumdrops in 1/2 cup of flour, and then whisk together 2 1/2 cups of flour, 2 teaspoons of baking powder and 1/2 teaspoon of salt in a separate bowl. Beat together 1 cup of softened butter, 4 ounces of softened cream cheese and 1 1/2 cups of sugar using a stand mixer. Add 4 eggs, 1 teaspoon of vanilla extract and 1 teaspoon of almond extract. Stir the flour mixture and 1/2 cup of milk in several alternating additions into the cream cheese mixture, and finish by folding in the gumdrops. Spoon the batter into a Bundt pan, and bake the cake at 350 degrees F for 75 minutes.
