Recipes for ground beef include meatloaf, and beef macaroni and cheese. Each recipe can be made with lean or more fatty mixtures of ground beef, as well as with low-fat or non-fat dairy products.
To make meatloaf, combine 1 1/2 pounds of ground beef, 1 slice of bread broken into pieces or finely chopped, 1 finely chopped sweet onion, 1 teaspoon of salt and one teaspoon of black pepper. To this mixture add 1 egg, 4 tablespoons of ketchup and 1/2 to 2/3 cup of whole milk or half-and-half. Mix the ingredients well and place in a loaf pan. Cover the meatloaf with a sauce consisting of 4 tablespoons of apple cider vinegar, 2 to 4 tablespoons of brown sugar and 1/2 cup of ketchup. Bake at 350 degrees Fahrenheit for about 60 to 75 minutes.
To make beef macaroni and cheese, heat 2 tablespoons of vegetable oil in a skillet and sauté 2 cups each of chopped green bell peppers and sweet onions, and 1 tablespoon of chopped garlic. Add 2 pounds of ground beef and sauté until browned. Add 3 cups of crushed tomatoes to the beef mixture along with salt and pepper to taste, and 1 teaspoon each of dried basil, oregano and cumin. Combine this mixture with 1 pound of cooked elbow macaroni, and spread into a baking dish. Top the mixture with 2 to 3 cups of grated cheddar cheese, and bake at 350 degrees Fahrenheit for 20 to 25 minutes.
